Celiac & IBS Reversal

Celiac disease is a digestive disorder that occurs in reaction to gluten, a protein found in rye, barley, wheat, and hundreds of foods made with these grains. The body's immune system reacts to the gluten and causes damage to the intestine. Celiac disease, also known as celiac sprue or gluten-sensitive enteropathy, is fairly common. So when you eat a cookie, the gluten damages the little villi in the small intestines.  If it attacks the thyroid it is Hashimotos, if it attacks the joints it is arthritis.  Pasano, and expert in auto-immune response system says that gluten is the cause of the disruption in the lower intestines.

 According to Blum, the gluten-filled cookie you ate would then go down to the weakened intestines and as it has not been digested properly so is sending off alarm bells in the body.  She says, "just because modern medicine hasn't discovered the right laboratory test for you doesn't mean the gluten isn't wreaking havoc with your immune system" (Blum, 2013: p.51).

Foods that are BAD for the immune system

Sugar: A diet that contains processed sugar is associated with increased inflammation and imparied function of the immune cells called T cells and B cells.  You should eliminate any food made with white flour or white sugar, such as cookies, bread, breakfast cereals, cakes, crackers, candy, and soft drinks.  You should also watch out for iother foods where sugar is hiding.

There are good fats and bad fats.  Saturated (bad) fat comes from cattle in beef and dairy products.  Bad fats create more arachidonic acid in the body which was shown to be relieved with an anti-inflammatory diet when fish-oil was substitued. Detox helps achieve this.
